Hello friends, welcome back to Delicioso. My name is Julieta. In this video we are going to prepare
some very easy Pickled Jalapeno Peppers; a family recipe.
The recipe of the grandfather, who has given us the ingredients he used with the same quantities.
Let's make Pickled Jalapeno Peppers.
The ingredients for these pickled jalapeno peppers are going to be the following: 1 pound of jalapeno peppers.
Here you can choose jalapeno peppers, serrano peppers
and you can even use piquin pepper to make them with vinegar.
2 carrots very well washed as we will leave them the skin, ½ an onion, apple cider vinegar;
very important that it be apple cider vinegar.
What the white vinegar will do is the peppers will come out very sour and the apple vinegar does not.
We will need whole cumin, whole pepper, oregano, oil, sugar, salt and 8 garlic cloves already peeled.
We will also need a glass jar; very important that it is glass. These jars that have a rubber seal here.
If you do not have this glass jar you can use a clean mayonnaise jar. This is a 1 liter jar.
And we will also need 2 measuring spoons; The 1 teaspoon and the ½ teaspoon
Let's cut the peppers; I will make them in slices because more fit in the glass jar and it is also easier
to cook in the vinegar and they take less time to be ready.
But if you want them whole it will also work.
The only thing you have to do is make a small cut through the peppers so that
the vinegar goes in there when we have them in the vinegar.
I'm going to cut them like this; I'm going to remove this part from here and I will cut them in 4 or 6 parts.
I'm going to leave the seeds because here the important thing about these peppers is that they are really spicy.
When we have cut the peppers; I cut about 10 to 12 peppers.
I will not cut them all because I do not know if they will fit in my glass jar.
If I need more I will cut them after I fill the jar.
Now let's cut the onion. The onion I'm going to cut it like this; this time we are going to julienne the onion.
Let's cut the carrots; I'm going to remove the two edges and cut them into slices.
Just like they come in the pickled peppers we buy at stores.
We will also cut the garlic into slices; like this, to make it easier
for all the flavors of garlic to be released in the vinegar.
Once we have chopped the peppers, the carrots, the onion and the garlic we will do the following.
In the glass jar; very important that the jar is completely dry, there should be no water.
Let's start adding a few carrots to the bottom.
If you like carrots a lot in pickled peppers you can add more carrots.
I will add a few peppers, onions, and some garlic. And so we are going to make layers until we finish filling the jar.
Once you have filled your jar with the layers of carrots, onion, peppers and garlic.
What we are going to do is leave some space here and we will add the spices
that are the ones that are going to give a very special flavor to these pickled peppers.
I will add 1 teaspoon of whole cumin. It's a measure of more or less like this. I will add the cumin.
1/2 a teaspoon whole pepper; more or less this amount. I will add ½ a teaspoon of oregano;
it is also more or less this amount. I will add ½ a teaspoon of sugar,
½ a teaspoon of salt and we will add a little oil; about 1 teaspoon.
We will fill the glass jar with vinegar, until the jar is completely filled.
Then for these pickled jalapeno peppers the grandfather's advice were:
that the jar is made of glass,
that all the ingredients are very dry; they have no water,
that we use apple vinegar,
and preferably that the jar has this rubber seal.
We will close it very well and we will let them rest for at least 2 weeks.
What we can do is from time to time; 1 time a day or 1 time every two days
mixes the jar a little so that the ingredients begin to mix.
These pickled jalapeno peppers are ready; and all we have to do is wait.
