Hey everybody welcome back for another episode here at T-Roy Cooks.
I really appreciate you joining me once again.
Folks we're going to do some bacon-wrapped chicken tonight. And my buddy Ken Darnell,
he's a subscriber of mine, he sent me this recipe after he made this and he said it was fantastic!
Now I don't know if it was something that he created or something that he found somewhere but
Ken sent me the recipe and we're goingto check it out tonight.
And I'm going to change it up just a little bit so it's not exact, Ken, I apologize for that but
we're going to check it out. The first difference is I'm using chicken thighs, he used chicken breast.
Alright so boneless skinless chicken thighs.
And I've had them marinating for about 3 hours in some dark beer, specifically this Guinness Extra Stout.
Alright if you haven't tried marinating some chicken in some dark beer like a Bock or a stout,
you should give that a try, it's fantastic. A couple of hours would work fine, even an hour would work.
But this has been going for 3 hours. We're fixin' to pull it out of the fridge,
we're going to rub it down with some rubs, and we'regoing to wrap it with some bacon.
Oh and back here got my Komodo Joe getting fired up.
She's about 350 to 375 Fahrenheit whichis a good temperature to cook chicken at.
And we want to crisp up that bacon soyou don't want go too low with the temp
325 at a minimum but I'm going 350 375and oh I've got some Mesquite want the
charcoal on there so that's what we'recooking with tonight it's gonna be a
fantastic video y'all stick around we'llbe right back okay everybody this is
those chicken thighs that I've hadmarinating for three hours in that
Guinness Stout now what I'm gonna doI've got a couple of different rubs this
is that red monkey this is the mangohabanero this is a good stuff on chicken
folks and they're they're savory steakit's excellent alone steaks - I'm
telling you man it's good stuff someoneput a little bit of this on there
and I didn't put any oil or anything onhere because we're gonna wrap this in
bacon and you don't really need to ifyou were just directly grilling this
yeah but just some oil on here so itdoesn't stick I'll tell you this mango
habanero red monkey ass good stuff rightthere folks all right we're gonna flip
it over the other side now this is alocal Austin company this is Underwood's
and this is it's my rub and again you'llcheck out the links down below I'll show
you how everything we don't get thiskind of stuff we're going to check this
out folks I've never tried this beforebut it smells fantastic
oh he's got some paprika in there alittle cayenne I supposed to be like uh
it's not sweet not too sweet anyway butit is supposed to be really really good
and the bacon that I'm using is justsome hickory smoked bacon right here
from Smithfield bacon we're gonna checkthis out we're gonna wrap these up so
I'm gonna flip these over we're going tocook the other side with some of these
rubs we'll meet you right back after wewrap with some bacon okay everybody
i've got mike amato joe up to about 350farenheit just gonna fit these
the breasts I'm sorry chicks it's timewe roll the come on oh just let them
cook a little bit and it's probablygonna take about I'm guessing 45 minutes
to an hour all right everybody it's beenabout 45 minutes as you can see I did
flip these over just to kind of crisp upthat bacon on the top side now we're
fixing to put some of this candiedjalapeno
barbecue sauce on there that theyalready can used and also put some some
asparagus over here kind of grilling upsome asparagus is just some olive oil
salt and pepper on the asparagus butfolks this is what I'm using right here
candied jalapeno barbecue sauce and thisis from Missy I know if you can see it
it's from Ohio a mesh wedding foods calmnow again I'll put a link down below so
y'all fine yeah but this stuff amazingfolks put a little bit in the bowl right
here we're fixin to brush some of thison my chicken and we're gonna give it
about another 10 minutes not the sprayergets finished cooking over here oh yeah
babe so let me do this we'll be rightback folks will show you the finished
product here when I bring it back insidethank you here buddy this is what we got
is the final plate got some chickenthighs over here and I'll tell you what
