welcome to barbecue food for you the
backyard barbecue show today I'm showing
you how to cook up jalapeno popper
volcano potatoes this is a great recipe
to spice up your potatoes and give it a
cool little twist be sure to give it a
try and share this recipe with your
family and friends now let's get started
start with two large russet potatoes and
two jalapeno peppers give them a rinse
under cold water get your barbecue set
up for two zone indirect cooking place
the potatoes directly on the hot coals
get the lid on and give them a flip
every five minutes while the potatoes
are cooking get your volcano sauce
prepped half a cup of sour cream and a
tablespoon of your favorite hot sauce
this is uncle Nathan's ghost pepper
sauce give it a good mix then place it
in the fridge after 20 minutes take the
potatoes off let them cool down place
your grade on
and grill at the jalapenos just Brown in
the sides once you have the jalapenos
lightly grilled take them off after the
potatoes have cooled down and they're
okay to handle chop the end off one for
the bottom and cut a zigzag pattern in
the top take an apple coring tool and
just core out the middle the potato do
it a couple times so the jalapeno can
fit right in take a small paring knife
chop the top off the jalapeno and clean
out the insides once you have most the
jalapeno cleaned out give it a rinse
under cold water to get the rest the
seeds out now it's time to get the
jalapeno stuffed i'm using Philadelphia
Cream Cheese herb and garlic start with
small spoons and just press it in once
you have the jalapeno stuffed place it
right in the middle of the potato and
gently push down nice fit take four
slices of bacon for each potato and wrap
it around start at the bottom and just
work your way up if you need toothpicks
to pin it down just pin it down but
usually if you stretch it out pretty
good it will hold on itself
place a drip pan on the void side of the
cooker with two cups of water and get
the potatoes on going to toss on Chuck a
hickory wood right on top and people
were asking me why I do this just the
wood burns a little bit longer producing
more smoke well get the lid on let that
keep cooking potatoes been on for ten
minutes let's take a peek everything's
looking good shut the lid let them keep
cooking 20 minutes in let's take a quick
peek looking good cooking nice and even
shut the lid let them keep going 30
minutes in let's take a peek looking
pretty dang good let's top it with some
cheddar cheese
a cheese is going to melt and start
running all down the side looking good
put the lid on give me bout another 5-10
minutes five minutes take a peek looking
good going to give them a couple more
minutes though maybe another five let's
take them off and get them on a plate
pull the toothpicks out
topping with some of that volcano sauce
we mixed up earlier I added a dash of
ancho chili powder and have prico to it
place it right on top good load letting
it drip over when it heats up it will
start flowing and top it with some green
onions
I am let's cut this one right down the
middle and take a peek still piping hot
crack it open check that out now that
looks absolutely delicious nice crispy
bacon on the outside got the grilled
jalapeno filled with cream cheese on the
inside volcano sauce cheddar cheese
green onions it's time to eat to finish
them off I like to top them with a
little bit more volcano sauce and some
more green onions don't I look good
